Our Products


The majority of the production is for the "Cosacavaddu" cheese, one of the most ancient historic cheeses of the Sicily.
To make the Italian Cheese Halal, in 2015 we obtained the Halal certification in order to meet the needs of Islamic faithful.
The Halal cheeses are produced with the use of cow's milk, Halal certificate rennet and salt.  



 
"Ragusano D.O.P." 

The "Ragusano D.O.P."  is a stretched cheesewith traditional features. The ingredients are:

  • Whole raw cow's milk
  • Rennet
  • Salt
Its shape is parallelepiped with a smooth rind.

It's a product with a size from 10 Kg to 16 Kg.

From the straw yellow-golden colour,  it's characterized for its intense and spicy flavor and from typical taste with a compact cheese texture.
Its ripening is over 240 days in case of the aged cheese.
 



"Cosacavaddu" 
The "Cosacavaddu" is a stretched cheese with traditional features. The ingredients are: 

  • Whole raw cow's milk
  • Rennet
  • Salt
Its shape is parallelepiped with a smooth rind.

It's a product with a size from 13 Kg to 15 Kg

From the straw yellow colour, it's characterized  for its intense and spicy flavor and from typical taste with a compact cheese texture.
Its ripening is over 90 days in case of the semicured cheese "Cosacavaddu" and 180 days in case of the aged cheese "Cosacavaddu"



Green cheese "Cosacavaddu" 

The green cheese "Cosacavaddu" is a stretched cheese with traditional features. The ingredients are: 

  • Whole raw cow's milk 
  • Rennet
  • Salt
Its shape is parallelepiped with a smooth rind 

It's a product with a size from 8 Kg to 15 Kg.

From the white colour tending to the straw,  it's characterized for its delicate flavor and from typical taste with a compact cheese texture. 
Its ripening is from 10 to 15 days at a controlled temperature.
  

Green cheese "Provola" 
The green cheese "Provola" is a stretched cheese.
The ingredients are: 

  • Whole raw cow's milk
  • Rennet
  • Salt
Its shape is spherical with a smooth rind.

It's a product with a size from 500 g to 800 g.

From the white colour tending to the straw, it's characterized for its delicate flavor and from typical taste with a compact cheese texture.
Its ripening lasts in a short time. 


Ricotta cheese 
The "Ricotta cheese" is a fresh dairy product derived from the serum.
The ingredients are: 

  • Whole raw cow's milk
  • Serum
  • Salt
Its shape is truncated cone.

It's a product with a size from 1 Kg.

From the white colour, it's characterized for its delicate flavor and from typical taste with a creamy texture.




Green cheese "tumazzu"
The Green cheese "tumazzu" is a stretched cheese with or without black pepper. The ingredients are:
 
  • Whole raw cow's milk
  • Rennet
  • Salt
Its shape is round.

It's a product with a size from Kg 4 to Kg 12

From the white colour tending to the straw, it's characterized for its  delicate flavor and from typical taste with a compact cheese texture. Its ripening is over 20 days

  
 Salted ricotta cheese
The Salted ricotta cheese is a dairy product from table or to grate.The ingredients are:

 
  • Whole raw cow's milk
  • Serum
  • Salt
Its shape is truncated cone.

It's a product with a size from g 600

Ricotta cheese cream
The Ricotta cheese cream is a fresh dairy product derived fromthe serum with added sugar subjected to the heat treatment of freezing.The ingredients are:

 
  • Ricotta cheese
  • Sugar
  • Cinnamon
  • Vanilla

It's a product with a size from Kg 1

Smoked green cheese "provola"
The Smoked green cheese "provola" is a stretched cheese with added smoked liquid.
The ingredients are:

 
  • Whole raw cow's milk
  • Rennet
  • Salt
  • Smoked liquid
Its shape is spherical with a smooth rind

It's a product with a size from g 500

From the brown colour, it's characterized for its savory flavor and from typical taste with a compact cheese texture. Its ripening is over 4 days

The Smoked green cheese is a stretched cheese with added smoked liquid.
The ingredients are:

 
  • Whole raw cow's milk
  • Rennet
  • Salt
  • Smoked liquid
Its shape is parallelepiped with a smooth rind

It's a product with a size from Kg 8

From the brown colour, it's characterized for its savory flavor and from typical taste with a compact cheese texture. Its ripening is over 4 days 


Halal cheese
The Halal cheese is a stretched cheese. The ingredients are:
  • Whole raw cow's milk
  • Rennet
  • Salt
Its shape is parallelepiped with a smooth rind

It's a product with a size from Kg 13 to Kg 15

From the straw yellow, it's characterized for its intense and spicy flavor and from typical taste with a compact cheese texture. Its ripening is from 10 to 15 days about the green cheese, over 90 days it's a semicured cheese 





The Mozzarella fiordilatte

The Mozzarella fiordilatte is a spun cheese from cow's milk.
The ingredients are:
  • Whole raw cow's milk
  • Rennet
  • Salt
  • Lactic ferments
Its shape is spherical with a smooth rind.

It's a product with a size from 200 g

From the white colour, it's characterized for its typical smell 
of fresh cheese and pleasant odor.




The Mozzarella cheese for pizza

The Mozzarella cheese for pizza is a spun cheese from cow's milk.
The ingredients are:
  • Whole raw cow's milk
  • Rennet
  • Salt
  • Lactic ferments
Its shape is cylindrical with a smooth rind.

It's a product with a size from 1000 g
 

From the white colour, it's characterized for its typical smell
of fresh cheese and pleasant odor.
 


 
The Stracciatella Cheese

The stracciatella cheese is a shredded mozzarella cheese 
from cow's milk and mixed with cream (heart of Burrata cheese)

The ingredients are:
  • Whole raw cow's milk
  • Rennet
  • Salt
  • Lactic ferments
  • Cream UHT
It's a product with a size by request.

It's a mixture of cream UHT and shredded mozzarella cheese with a delicate taste characterized by a soft and creamy structure.








The Green Cheese "Tumazzu fresco"

The green cheese "tumazzu fresco" is a stretched cheese
with or without spices.

The ingredients are:
  • Whole raw cow's milk
  • Microbial rennet
  • Salt
 
It's a product with a size from g 400 to g 800.

From the white colour, it's characterized for its delicate
taste and a soft structure
